Instructions
Prepare the Chorizo
- Place a skillet over medium heat. Remove the chorizo from its casing. Add the chorizo to the hot skillet. Break it apart with a spatula as it cooks. Cook until completely browned and no longer pink.

- Transfer the cooked chorizo to a paper towel-lined plate. Allow the excess grease to drain. Set the chorizo aside to cool slightly.

Prepare the Filling
- Place the softened cream cheese in a large mixing bowl. Add all the filling ingredients and mix. Fold the drained chorizo into the cheese mixture. Continue mixing until the chorizo is evenly distributed throughout the filling.

- Place one flatbread on a clean work surface. Use a small cookie scoop to portion the filling onto the flatbread.

- Arrange the filling in a 3-by-4 grid, creating 12 evenly spaced portions.
- Leave enough space between each portion to cut and seal the individual taco bites.
Prepare the Egg Wash
- Crack the eggs into a shallow bowl. Whisk the eggs until completely combined. Lightly brush the egg wash between each portion of filling.
- Brush egg wash around the outer border of the flatbread.

Form the Taco Bites
- Place a second flatbread directly over the filled flatbread. Press gently around each mound of filling. Use a sharp knife or pizza cutter to cut vertically between the filling portions.
- Cut horizontally between the filling portions. You should now have approximately 12 filled squares. The complete recipe should yield approximately 24 taco bites.

Prepare the Cotija Coating
- Place the grated Cotija cheese in a separate shallow bowl. Dip one filled square into the whisked egg. Coat the square completely with grated Cotija cheese.
- Press the edges together firmly to reinforce the seal. Repeat with all remaining taco bites.

Pan-Frying Instructions
- Heat the oil over medium heat. Carefully place several taco bites into the skillet without overcrowding the pan.
- Cook for 2 to 3 minutes on the first side.

Air-Fryer Instructions
- Preheat the air fryer to 350°F.
- Arrange the taco bites in a single layer inside the air-fryer basket. Do not overcrowd the basket.
- Lightly spray the taco bites with cooking oil, if desired. Air-fry for 8 minutes, flipping halfway through.
- Watch them closely during the final few minutes because the Cotija coating can brown quickly. Remove them when the coating is golden and the filling is heated through.
Garnish and Serve
- Arrange the taco bites on a serving platter.

- Sprinkle with additional grated Cotija cheese. Add chopped cilantro. Serve the taco bites hot.
- Enjoy the crispiest, creamiest, most flavorful low-carb taco bites you have ever tasted! 🌮🔥

Notes
These taco bites deliver a little bit of everything in one satisfying piece: a crispy cheese coating, creamy filling, savory chorizo, bright lime zest, and just enough seasoning to make every bite exciting. 😍 For a smaller batch, cut the recipe in half. You can also prepare the bites in advance, cover them tightly, and refrigerate them until you are ready to cook. The air fryer is the best option when you want a lighter version with less added oil. Pan-frying creates a richer, deeply golden crust. Both methods are delicious. For a milder version, replace the chorizo with seasoned ground chicken, turkey, or beef. For extra heat, mix chopped jalapeños into the filling or serve with spicy queso.
